I think it tastes best when slow cooked all day. This is my recipe with a few plan friendly changes. Seasoning measurements are an estimate because I like to just dump seasonings in without measuring.
Meat:
1 lb ground turkey breast
1 teaspoon garlic powder
½ teaspoon cayenne pepper
1 tablespoon oregano
¼ teaspoon paprika
1 teaspoon sage
½ teaspoon black pepper
1 teaspoon basil
Sauce: See below for sauce recipe and double it. Make it up beforehand.
Filling:
1 onion, diced
½ lb sliced mushrooms
2 cups fresh spinach
¼ cup fresh parsley
½ cup eggplant, cubed
1 jalepeno pepper, diced (optional)
1 tablespoon egg white ( Note: This would be roughly equivalent to half an egg white.)
2 garlic cloves, diced
1/8 cup red wine
uncooked rice lasagna noodles
Combine all of the meat ingredients as well as 1 garlic clove, ¼ of the onion and a few mushrooms in a non-stick skillet. Heat until meat is browned. Add about ¼ of the sauce to the meat mixture and set aside.
Combine all filling ingredients except for the red wine and the spinach in a bowl.
In your crockpot, put a thin layer of tomato sauce at the bottom of the crock pot. Add a layer of uncooked noodles. Add a layer of the meat mixture on top of the noodles. Add a layer of spinach leaves. On top of the spinach add a layer of the filling. Pour some tomato sauce on top of the filling. Add another layer of noodles and repeat as desired. Make sure the top layer is rice noodles. Save some tomato sauce for the very top of the lasagna. Pour the red wine on top of everything. Cook on low for 5-7 hours.
Pizza sauce
1 (14.5 oz) can nsa diced tomatoes
1 (6 oz) can tomato paste
1 tablespoon Splenda, more or less to your taste
¼ teaspoon lemon juice
oregano, to taste
basil, to taste
thyme, to taste
dash pepper
dashes Rosemary
dash marjoram
Drain the can of diced tomatoes, put them and all the rest of the ingredients into the tall cup. I recommend doing only about a ½ teaspoon of the spices at first, then blend it up. Do a taste test and if you think it doesn't have enough of a spice, then add more and blend again, till you get it the way you like it. You may need to stop and shake or tap the cup a few times. When it tastes great to you put it in a pot and bring it to a boil and then let it simmer for 15-20 minutes. Let it cool and store in the fridge.
