16 oz extra lean ground turkey (this is roughly 120 cal and 1.5 fat for 4 oz turkey...ya gotta look for it most others are 7%)
3 tbsp yellow cornmeal 1/2 cup minced onion 1 med. jalapeno pepper, seeded and minced 1/4 cup egg substitue or egg whites if you buy them in bulk 3/4 tsp salt 1/2 cup mild or hot salsa nonstick cooking spray
Preheat oven to 375 Spray four large size muffin cups with nonstick cooking spray In a med. mixing bowl, combine ground meat with cornmeal, onion, jalapeno, egg sub and salt. Mix well. Fill each prepared muffin cup with an equal amount of meat mixture. Bake 20 to 25 min until cooked through. Place on plate and top with 1 tbsp salsa each. Serve with green salad and or rice.
The mini meatloaf itself is only
170 cal, 29 grams of protein, 9 carbs, 4 fat and 1 gram of fiber. This is IDEAL
PS notice on a clean meal a green salad is just that...salad with only veggies in it...not cheese, croutons etc. and then use a fat free dressing or apple cider vinegar. I personally really like rice vinegar. You just want to choose vinegars that don't have sugar in them.
PS not everyone has a large muffin muffin pan so you could even seperate this into four equal portions and shape as a big ball, shape as a mini loaf and put each one on a baking sheet too.
This makes 4 portions

Okay,I made these in a regular muffin pan,so how many of these would be considered a serving?

seriously just weigh it out and if it is 4 oz stop and if it's not then add more of another muffin to get your four ounces.
